
I think Mike might be pregnant.
He has been possessed by sudden food cravings lately. Last night he craved fresh homemade salsa, and I am soooo glad he did! He found a recipe that looked good, and at about 9:30 last night I ran off to the store to get the fixin's. By 10:30 we were watching x-files and eating some very very tasty fresh salsa. The process was fun and quick (we took our time getting the flavor combinations juuuust right.), and only one of us sustained acid burns to their cunjuctiva from improperly handling the jalapeno. (I won't say who, but if you see me over the next few days, I will probably be wearing my glasses...)
Here is the recipe, if the yummy picture above has inspired you:
8 medium tomatoes (I got the ones that come attached on the vine) chopped
1/2 medium onion finely chopped
1/3 cup chopped cilantro
3 cloves garlic chopped(or 1 1/2 tsp. chopped)
1 jalapeno pepper, seeded and finely minced (add a little at a time until you get the right heat for you)
juice of 1 lime
salt to taste
All you have to do is throw it all together! Yummy yummy!

you are amazing! how did you know I've been craving fresh homemade salsa lately? and no, I'm not pregnant like Michael. Thank you sooo much for posting the recipe since I don't have a good one. Now I' can satisfy my craving too!
Josh and his family are fresh salsa connoisseurs and now, we are too.
Something we do is chop all the tomatoes by hand so there's a bit less juice in there and then add rice vinigar (1/4-1/2 a bottle).
Then add one apple chopped up and/or a pear chopped up... (we usually do both)
you'll have yourself an AMAZING sweet (or sweet and spicey if you like) fresh salsa... AMAZING!! We even add a little sugar when we're going real sweet with it! Sometimes some pepper. Even some tomatillos if we want to go "tangy".
Soooo, good! I just ate and this is making me hungry all over again! I LOVE fresh salsa!
